Tofu Spread with Herbs and No Added Sugar Cranberries
Ingrédients
½ lb firm tofu, cut into big cubes
1 clove garlic, peeled
2 tablespoons mayonnaise
2 tablespoons Greek yogurt
2 green onions, sliced with scissors
1/2 cup fresh parsley, sliced with scissors
1/3 cup Patience Fruit & Co No Added Sugar Cranberries, roughly chopped
Cumin, to taste

Our tofu spread is a snap to prepare from just a few simple ingredients. We like it with lots of fresh herbs and garlic and our no-added-sugar cranberries. The quantities here will give you the general idea, but it’s an “eyeball” recipe, so just mix it up your way.
To go with a nice piece of smoked salmon, try lemon zest and dill instead of cumin and parsley.
